docs(sheepdog): point mutability reference to subtractive-structural-beauty [docs] - #2159

セルフレビュー（#2144）
- 受け入れ条件: 満たしている。docs/G.-Sheepdog-Engineering.md の参照先を、文が実在する rules/model/subtractive-structural-beauty.md Application notes に差し替えた（同ファイル 60 行目で確認）。
- 範囲逸脱: なし。wiki の判断記録にある同じ参照は、当時の判断の記録として残す。
- governed surface ではない（docs のみ）ため brake 1 対象外。CI green。
- release 種別: patch。semi_auto の patch として直接マージする。
- workspace 側の後処理: per-session clone の削除のみ。
