[Bug]: sendmail option in basic setting vanished #50774

Bug description
Hi,
we are using the nextcloud snap and just noticed that emails do not go out anymore.
Checking basic settings the option to select sendmail vanished.
But as you can see sendmail used to be working:
$ nextcloud.occ config:list | grep mail

Now it is not selectable in basic settings and does not work anymore.
sendmail (provided by postfix) is still available on the system and nothing besides system updates changed.

As we track in nextcloud-snap/nextcloud-snap#3047 this is still a problem in the 31.0.4 snap.
